200ml recently pressed lemon juice
500g granulated sugar

To make the Cocktail (produces 850ml, to serve 10)

Method

Making the Syrup: Combine the listed components inside a pan, bring to a simmer, stirring so the sugar melts. After that, take off the heat allowing it to cool down completely. Pour into a sterilised bottle, seal and store chilled, where it will keep for up to four weeks.

Preparing the Batch Mix: Combine the specified liquid ingredients into one sizeable container, let it rest for 60 minutes, then filter it , ideally through a fine cloth, making it completely strained.

When ready to serve: Measure 85ml of your premix into your mixing glass containing ice, and agitate carefully for about 60 seconds to chill. Strain into a frosted cocktail glass or a similar vessel, garnish with some cranberries and complete it using a brief mist with the mandarin essence over the top.
